I love to cook. Most people know that I spend a great deal of my time in the kitchen creating meals for my family. That is my happy place! However, there are times when I need a meal on the table, quick, fast, and in a hurry. On those nights I turn to Eckrich Smoked Sausage; or in this case Eckrich Cheddar Smoked Sausage!
I love pairing the smoked sausage with potatoes, but I love having a vegetable present as well. I came across the perfect recipe on the Eckrich website for Potato, Broccoli, and Smoked Sausage Skillet, and loved the idea. So I gave it a go but changed things up a bit. Below is my version!
Cheesy Cheddar Smoked Sausage with Potatoes and Broccoli
- Family Sized Package of Eckrich Cheddar Smoked Sausage
- 5 medium russet potatoes; peeled and diced
- 1 medium onion; diced
- 2 TBSP oil
- Family sized package of broccoli in cheese sauce
- pepper to taste
- shredded cheddar cheese
Heat oil over medium heat. Add onions, saute until slightly translucent. Add potatoes, cook until slightly browned. Cut sausage into bite-sized rounds, and add to onions and potatoes. Cook until potatoes are fork tender (roughly 30 minutes, stirring every 5 or 10 minutes). Meanwhile, cook broccoli in cheese sauce according to package instructions.
In a large bowl combine the sausage, potatoes, and onion with the broccoli in cheese sauce. Mix well. Serve with a sprinkle of shredded cheddar cheese on top. Enjoy!
This is one of those meals that is not only fast but filling as well. Plus, there is plenty for seconds, or as leftovers for lunch! My kids love the cheesy goodness, and always devour every bite! Eckrich makes a variety of smoked sausages, and I make sure that I always have some on hand for meals like this. Full bellies make a happy mama!
